For me, going away to college was a great shock. At the time, I was so food-obsessed that I refused to live in the dormitories and pay for the mandatory school meal plan. So I moved in with some friends and tried, for the first time in my life, to feed myself.
I ate out every meal for the first two months. This was exciting at Berkeley since there was so much delicious food, but the novelty soon wore off. I didn’t like the additional 25 pounds that appeared to accumulate on my thighs. As a result, I made the decision to start preparing more meals at home.
I wanted to make hardboiled eggs one day but didn’t know where to begin. I dialed my grandmother’s number, who advised me to crack some eggs into a saucepan, cover them with cold water, and set the heat to high until it began to boil. After that, I was instructed to switch off the burner and wait 12 minutes.
The yolks of my first eggs were still a bit tender when I broke them open, and I freaked out. I’d never heard of a soft-boiled egg before, and I was certain that runny egg yolks were pure salmonella. So I tossed them away and dialed my father’s number for additional help. The egg testing lasted well over an hour until I eventually nailed one. I felt ashamed of how much food I’d thrown out and how long it had taken me to do this basic activity. Cooking was never something I learned as a child, and feeding myself proved to be a difficult task. Why some of the simplest thing I have often forgot the first time I attempted to cook pasta and set off the fire alarm.
I didn’t give up even if things weren’t going well. After a string of poor luck with the stove, For many years, I resolved to limit myself to salads and deli meats. Finally, I went to Italy to study abroad and picked up a few easy kinds of pasta and veggie recipes from my housemates. It took another four years for me to find the farmers market and begin preparing meals that I wouldn’t have been ashamed to share with others. Of course, if you just saw Darya today, you wouldn’t know any of that.
People believe I’ve always been a terrific chef based on my Instagram and Facebook photos. As if I’d always known how to cook a chicken or sauté vegetables.
